Ingredients

  • 1 cup Biscoff or speculoos cookie crumbs
  • 3 tbsp melted butter
  • 8 oz cream cheese, softened
  • ¾ cup powdered sugar
  • ½ cup cookie butter (plus extra for drizzling)
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • Extra cookies for garnish (optional)

Instructions

  1. Prepare the crust by mixing cookie crumbs and melted butter until evenly coated.
  2. Spoon the crust mixture into serving cups, pressing down to form a crust.
  3. Whip heavy cream until soft peaks form; set aside.
  4. In a mixing bowl, beat softened cream cheese and powdered sugar, then mix in cookie butter and vanilla until smooth.
  5. Fold whipped cream into the cookie butter mixture gently.
  6. Layer the cheesecake filling over the crust, drizzling with melted cookie butter.
  7. Repeat with another layer of crust and cheesecake filling, finishing with the cheesecake on top.
  8. Garnish with extra cookie crumbs or whole cookies if desired.
  9. Chill in the fridge for at least 1 hour before serving.

Notes

Use room temperature cream cheese for smooth blending. Do not freeze to maintain texture.
