- 8 oz cream cheese, softened
- ¾ cup powdered sugar
- ½ cup cookie butter (plus extra for drizzling)
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- Extra cookies for garnish (optional)
Instructions
- Prepare the crust by mixing cookie crumbs and melted butter until evenly coated.
- Spoon the crust mixture into serving cups, pressing down to form a crust.
- Whip heavy cream until soft peaks form; set aside.
- In a mixing bowl, beat softened cream cheese and powdered sugar, then mix in cookie butter and vanilla until smooth.
- Fold whipped cream into the cookie butter mixture gently.
- Layer the cheesecake filling over the crust, drizzling with melted cookie butter.
- Repeat with another layer of crust and cheesecake filling, finishing with the cheesecake on top.
- Garnish with extra cookie crumbs or whole cookies if desired.
- Chill in the fridge for at least 1 hour before serving.

Use room temperature cream cheese for smooth blending. Do not freeze to maintain texture.
