Description
A creamy, comforting corn casserole made with whole kernel corn, cream-style corn, sour cream, butter, and cornbread mix. Perfectly golden and versatile as a side dish for holidays or family dinners.
Ingredients
2 cans (15 oz each) whole kernel corn, well drained
1 can (15 oz) cream-style corn
1 cup sour cream
1/2 cup (1 stick) unsalted butter, melted
1 box (8.5 oz) cornbread mix (like Jiffy)
Optional: 1-2 tbsp sugar
Optional: 1 cup shredded cheddar cheese
Optional: 1 can (4 oz) diced green chiles, drained
Optional: pinch of salt and black pepper to taste
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
2. In a large bowl, combine drained whole kernel corn, cream-style corn, sour cream, and melted butter.
3. Stir in cornbread mix until just combined.
4. Fold in optional cheese or green chiles if using.
5. Pour mixture into prepared baking dish and spread evenly.
6. Bake 45–60 minutes until golden brown and set in the center.
7. Let rest 5–10 minutes before serving.
Notes
Do not overmix the batter to keep casserole tender.
Add sugar if you prefer a sweeter version.
Top with extra cheese during last 10 minutes for a cheesy crust.
Add jalapeños for a spicy kick.
Mix in herbs like thyme, rosemary, or sage for extra flavor.
Stir in bacon bits for smoky crunch.
