Ingredients

- 1 cup fresh cranberries
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 package (8 oz) cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon gelatin
- 2 tablespoons cold water
Instructions
- Prepare cranberry puree by cooking cranberries in water, simmer until soft, blend until smooth, and set aside to cool.
- Make vanilla mousse by mixing softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Whip heavy cream separately until soft peaks form.
- Dissolve gelatin in cold water, then mix into the cream cheese mixture.
- Layer the mousse and cranberry puree in individual cups, ending with cranberry puree on top.
- Chill the assembled cups in the refrigerator for at least 2 hours before serving.
Notes
Garnish with fresh cranberries, whipped cream, or mint. Store leftovers in the fridge for up to 3 days.
