Ingredients

  • 4 ounces of cream cheese (softened)
  • 1 teaspoon of peppermint extract
  • 1 cup of powdered sugar (sifted)
  • 1 cup of Andes mint chips or chopped Andes mints
  • Cocoa powder, crushed nuts, or chocolate sprinkles for coating (optional)

Instructions

  1. Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth. Let cool slightly.
  2. Beat the softened cream cheese until smooth, then add the peppermint extract and mix well.
  3. Pour the melted chocolate into the cream cheese mixture and stir until well combined.
  4. Gradually add sifted powdered sugar and stir until fully incorporated.
  5. Mix in the Andes mint chips until evenly distributed.
  6. Chill the mixture in the refrigerator for about 1 to 2 hours until firm.
  7. Roll small portions of the chilled mixture into balls.
  8. Coat the truffles in cocoa powder, crushed nuts, or chocolate sprinkles if desired.
