- 1 teaspoon of peppermint extract
- 1 cup of powdered sugar (sifted)
- 1 cup of Andes mint chips or chopped Andes mints
- Cocoa powder, crushed nuts, or chocolate sprinkles for coating (optional)
Instructions
- Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth. Let cool slightly.
- Beat the softened cream cheese until smooth, then add the peppermint extract and mix well.
- Pour the melted chocolate into the cream cheese mixture and stir until well combined.
- Gradually add sifted powdered sugar and stir until fully incorporated.
- Mix in the Andes mint chips until evenly distributed.
- Chill the mixture in the refrigerator for about 1 to 2 hours until firm.
- Roll small portions of the chilled mixture into balls.
- Coat the truffles in cocoa powder, crushed nuts, or chocolate sprinkles if desired.
- Chill the coated truffles on a baking sheet for about 30 minutes to set.
