Ingredients
4 medium russet potatoes, peeled and diced
1 tablespoon olive oil
1 medium yellow onion, chopped
4 cloves garlic, minced
4 cups chicken or vegetable broth
1 cup milk (whole milk or half-and-half)
1.5 cups sharp cheddar cheese, shredded
1/2 cup fresh herbs, chopped (chives, parsley, dill)
Salt and freshly ground black pepper to taste
Instructions
1. Peel and dice potatoes; chop onion and mince garlic.
2. Heat olive oil in a large pot, sauté onion until softened, then add garlic for 1 minute.
3. Add potatoes and broth; bring to boil, then simmer covered 15-20 minutes until tender.
4. Blend soup with immersion blender or stand blender to desired consistency.
5. Stir in milk and shredded cheddar cheese until melted.
6. Remove from heat and stir in fresh herbs.
7. Season generously with salt and freshly ground black pepper.
8. Serve warm and enjoy.
