Ingredients

  • 1 lb ground beef
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (15 oz) can black beans (drained and rinsed)
  • 1 (15 oz) can corn kernels (drained)
  • 2 cups beef broth
  • 1 cup heavy cream
  • 8 oz cream cheese (softened and cubed)
  • 1 ½ cups shredded cheddar cheese
  • Salt and pepper (to taste)
  • Optional toppings: sour cream, cilantro, sliced jalapeños, tortilla chips

Instructions

  1. In a large pot, heat a little oil over medium heat and add the ground beef. Cook for 5-7 minutes until browned.
  2. Drain excess fat, add chopped onion, and sauté for 3-4 minutes until softened.
  3. Stir in minced garlic and cook for 30 seconds.
  4. Add taco seasoning and mix to coat beef and onions.
  5. Pour in diced tomatoes, black beans, corn, and beef broth. Mix well.
  6. Bring the mixture to a boil, then reduce heat and let it simmer for 10-15 minutes.
  7. Stir in heavy cream and cream cheese, mixing until smooth.
  8. Add shredded cheddar cheese, stirring until melted.
  9. Season to taste with salt and pepper and ladle into bowls. Top with optional toppings.
