Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 packs of ramen noodles
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 cup mixed vegetables (like bell peppers, carrots, and spinach)
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a large pot, bring the chicken broth to a simmer.
  2. Add the chicken breasts and cook until they are no longer pink inside, about 15 minutes. Remove the chicken and let it cool, then shred it.
  3. In the same pot, add the minced garlic and cook for 1 minute until fragrant.
  4. Add the heavy cream and soy sauce, stirring to combine.
  5. Add the ramen noodles and mixed vegetables, cooking according to the noodle package instructions until tender.
  6. Stir in the shredded chicken and season with salt and pepper to taste.
  7. Serve hot, garnished with chopped green onions.

Notes
