- 2 boneless, skinless chicken breasts, cut in half horizontally to make 4 steaks
- 1 tsp salt
- ¼ tsp cracked black pepper
- 1 tsp sweet paprika
- 1 tsp onion powder
- 1 tsp dried thyme
- ¼ cup (35 g) plain (all-purpose) flour
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 1 tbsp freshly minced garlic
- ½ cup (125 ml) chicken stock
- 300 ml (10 fl oz) thickened (heavy) cream
- 1 tsp Dijon mustard
- ½ cup (50 g) grated parmesan cheese
- Salt and cracked black pepper, to taste
- Mashed potatoes, steamed rice, or pasta (for serving)
- Steamed greens (for serving)
- 1 tbsp finely chopped parsley (for garnish)
- Lemon wedges (for serving)
Instructions
- Prepare the Chicken: Sprinkle the chicken breasts with salt, cracked black pepper, sweet paprika, onion powder, and dried thyme. Season both sides evenly and press into the flour.
- Cook the Chicken: Heat olive oil and 1 tablespoon of unsalted butter in a large frying pan over medium-high heat. Add the chicken and cook for 5–6 minutes until golden brown. Remove and set aside.
- Make the Sauce: In the same pan, melt the remaining tablespoon of butter. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add Chicken Stock: Pour in chicken stock and reduce for 1–2 minutes until evaporated by half.
- Creamy Mixture: Stir in heavy cream and Dijon mustard, simmering for about 2 minutes until slightly thickened.
- Finishing Touches: Add grated parmesan cheese, adjust seasoning, and return chicken to the pan to warm through for 2–3 minutes.
- Serve and Enjoy: Plate the chicken, drizzle with sauce, and serve with mashed potatoes or pasta, steamed greens, and garnish with parsley and lemon wedges.
Notes
For best results, do not rush the sauce reduction. Use freshly minced garlic rather than garlic powder for stronger flavor.
