- 2 boneless skinless chicken breasts
- 8 oz rotini pasta
- 3 garlic cloves, minced
- 1 cup grated Parmesan cheese
- 1 cup heavy cream
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon fresh chopped parsley (optional)
Instructions
- Trim any excess fat from the chicken breasts and pat them dry. Season with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium-high heat and sear the chicken for 5-6 minutes on each side until golden brown. Remove and let it rest.
- Boil water in a pot, salt it, and cook the rotini pasta according to package directions. Drain and toss with butter.
- In the same skillet, lower heat and add more butter and garlic, sauté for 30 seconds until fragrant. Pour in heavy cream and let it simmer for 3-4 minutes.
- Gradually whisk in Parmesan cheese until smooth. Adjust thickness if needed with more cream or pasta water.
- Slice the chicken and combine the drained pasta with the sauce. Toss to coat.
- Plate the pasta, top with sliced chicken, drizzle extra sauce, and garnish with parsley.
Notes
Use fresh garlic for a more vibrant flavor. Adjust creaminess as desired and feel free to add veggies.
