Ingredients

  • 2 boneless skinless chicken breasts
  • 8 oz rotini pasta
  • 3 garlic cloves, minced
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon fresh chopped parsley (optional)

Instructions

  1. Trim any excess fat from the chicken breasts and pat them dry. Season with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a skillet over medium-high heat and sear the chicken for 5-6 minutes on each side until golden brown. Remove and let it rest.
  3. Boil water in a pot, salt it, and cook the rotini pasta according to package directions. Drain and toss with butter.
  4. In the same skillet, lower heat and add more butter and garlic, sauté for 30 seconds until fragrant. Pour in heavy cream and let it simmer for 3-4 minutes.
  5. Gradually whisk in Parmesan cheese until smooth. Adjust thickness if needed with more cream or pasta water.
  6. Slice the chicken and combine the drained pasta with the sauce. Toss to coat.
  7. Plate the pasta, top with sliced chicken, drizzle extra sauce, and garnish with parsley.

Notes

Use fresh garlic for a more vibrant flavor. Adjust creaminess as desired and feel free to add veggies.
