Description

A delightful dish that combines tender chicken with a creamy garlic Parmesan sauce over whole wheat pasta.


Ingredients

  • 8 oz whole wheat pasta
  • 1 lb lean chicken breast, diced
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. Cook the whole wheat pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken breast and cook until browned and cooked through.
  3. Stir in minced garlic and sauté for 1-2 minutes until fragrant.
  4. Lower the heat and add Greek yogurt and Parmesan cheese, mixing until combined and creamy.
  5. Add cooked pasta to the skillet and toss until evenly coated.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

For added flavor, use freshly minced garlic and consider adding red pepper flakes for a bit of heat.
