- 8 oz whole wheat pasta
- 1 lb lean chicken breast, diced
- 1 cup Greek yogurt
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley for garnish
Instructions
- Cook the whole wheat pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced chicken breast and cook until browned and cooked through.
- Stir in minced garlic and sauté for 1-2 minutes until fragrant.
- Lower the heat and add Greek yogurt and Parmesan cheese, mixing until combined and creamy.
- Add cooked pasta to the skillet and toss until evenly coated.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
For added flavor, use freshly minced garlic and consider adding red pepper flakes for a bit of heat.
