Ingredients

  • 2 cups fresh spinach
  • 150g feta cheese, crumbled
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Boil water in a large pot and cook the gnocchi according to the package instructions (2-4 minutes). Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic for 1-2 minutes until fragrant.
  3. Add fresh spinach to the skillet and cook for 2-3 minutes until wilted.
  4. Pour in heavy cream and add crumbled feta cheese. Stir well to create a creamy sauce.
  5. Add the cooked gnocchi to the skillet and gently combine with the sauce.
  6. Season with salt and pepper to taste, and serve warm with Parmesan cheese if desired.
