Ingredients

  • 2 cups potatoes
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 small red onion
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons vinegar
  • 2 hard-boiled eggs (optional)

Instructions

  1. Boil the potatoes in salted water until tender (10-15 minutes), then drain and cool.
  2. Blanch the green beans in boiling water for 3 minutes, then transfer to ice water.
  3. In a bowl, mix mayonnaise, Dijon mustard, salt, pepper, garlic powder, and vinegar.
  4. Cut cooled potatoes into bite-sized pieces and add to the dressing.
  5. Add blanched green beans and diced red onion, tossing gently.
  6. If desired, fold in chopped hard-boiled eggs.
  7. Cover and chill in the refrigerator for 30 minutes before serving.

Notes
