Ingredients

  • 4 oz cream cheese (or coconut butter for dairy-free)
  • 2 tbsp butter (or extra coconut butter for plant-based)
  • 3 tbsp powdered sugar (or erythritol for keto-friendly)
  • Zest of one lemon (fresh for best flavor)
  • 3 oz white chocolate chips (optional, for coating)
  • A drop of natural yellow food coloring or a pinch of turmeric (optional for color)

Instructions

  1. Bring cream cheese and butter to room temperature.
  2. In a mixing bowl, blend softened cream cheese, butter, powdered sugar, and lemon zest until smooth.
  3. Spread the mixture into a small container and chill until firm.
  4. Scoop out the mixture using a mini cookie scoop and form small balls.
  5. Freeze the truffles until firm, about 30 minutes.
  6. (Optional) Melt white chocolate chips and stir in oil for a smoother coating.
  7. Dip each truffle into the melted white chocolate and place them back on a parchment-lined plate.
  8. Allow chocolate to set, then serve or store in an airtight container.

Notes

For best flavor, use fresh lemon zest. Store in an airtight container in the fridge for up to a week or freeze for up to three months.
