A hearty and delicious low carb casserole that combines tender chicken, fresh vegetables, and a rich creamy sauce.


Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup crushed pork rinds (optional for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the cooked chicken, broccoli, cauliflower, heavy cream, half of the cheese, olive oil, garlic powder, onion powder, salt, and pepper.
  3. Transfer the mixture to a greased casserole dish.
  4. Top with the remaining cheese and crushed pork rinds if using.
  5. Bake for 30-35 minutes, or until bubbly and golden on top.
  6. Serve hot.
