Description

A delicious dish featuring tender chicken breasts in a creamy sauce with earthy mushrooms, sun-dried tomatoes, and olives, perfect over rice or pasta.


Ingredients

  • 1/3 cup all-purpose flour
  • 1 teaspoon paprika
  • 2 teaspoons dried thyme (divided)
  • 2 teaspoons dried oregano (divided)
  • 1 teaspoon sea salt (divided)
  • 1 teaspoon freshly ground pepper (divided)
  • 1 teaspoon chili flakes (plus more or less to taste)
  • 4 boneless skinless chicken breasts (sliced in half)
  • 4 tablespoons olive oil (divided)
  • 3 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes
  • 1/3 cup Kalamata olives (sliced)
  • 2 cups mushrooms
  • 1/2 cup heavy cream
  • 1/2 cup chicken stock
  • 1 cup Parmesan cheese (freshly grated)
  • 2 cups fresh spinach

Instructions

  1. Prepare the Flour Mixture: Combine the flour, paprika, 1 teaspoon thyme, 1 teaspoon oregano, 1/2 teaspoon salt, and 1/2 teaspoon black pepper in a bowl.
  2. Season the Chicken: Season chicken breasts with remaining salt, pepper, oregano, thyme, and chili flakes.
  3. Dredge the Chicken: Dredge the chicken in the flour mixture, shaking off excess flour.
  4. Cook the Chicken: Heat 2 tablespoons olive oil in a skillet over medium heat. Add chicken and cook for 3-5 minutes per side until golden brown. Remove and set aside.
  5. Sauté the Vegetables: In the same skillet, add remaining olive oil, garlic, sun-dried tomatoes, olives, and mushrooms. Sauté for 3-5 minutes.
  6. Make the Sauce: Add heavy cream, chicken stock, Parmesan cheese, spinach, salt, and pepper to the skillet and stir to combine.
  7. Simmer: Allow the sauce to simmer until thickened, then return the chicken to the skillet and cook until chicken reaches 165°F.
  8. Taste and Serve: Adjust seasonings and serve warm, optionally over rice or pasta.

Notes

For a vegan option, substitute chicken with tofu and heavy cream with coconut cream.
