Ingredients

  • 8 oz pasta
  • 1 cup fresh peas (or frozen)
  • 4 oz pancetta, diced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 lemon, zested and juiced
  • 2 cups arugula
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and add the diced pancetta. Cook until crispy.
  3. Add the fresh peas to the skillet and cook for 2-3 minutes.
  4. Stir in the heavy cream, lemon zest, and lemon juice. Let it simmer for a few minutes until slightly thickened.
  5. Add the cooked pasta to the skillet and toss to coat in the sauce.
  6. Mix in the arugula and grated Parmesan. Season with salt and pepper to taste.
  7. Serve immediately.

Notes

Use fresh peas when in season for the best flavor. Adjust sauce thickness with cream as desired. Garnish with extra Parmesan and cracked pepper.
