- 8 oz pasta
- 1 cup fresh peas (or frozen)
- 4 oz pancetta, diced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 lemon, zested and juiced
- 2 cups arugula
- Salt and pepper to taste
- Olive oil
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat and add the diced pancetta. Cook until crispy.
- Add the fresh peas to the skillet and cook for 2-3 minutes.
- Stir in the heavy cream, lemon zest, and lemon juice. Let it simmer for a few minutes until slightly thickened.
- Add the cooked pasta to the skillet and toss to coat in the sauce.
- Mix in the arugula and grated Parmesan. Season with salt and pepper to taste.
- Serve immediately.
Notes
Use fresh peas when in season for the best flavor. Adjust sauce thickness with cream as desired. Garnish with extra Parmesan and cracked pepper.
