Description

Ingredients

  • 2 pounds of potatoes
  • 1 cup of mayonnaise
  • 2 tablespoons of Dijon mustard
  • 1/2 cup of chopped red onion
  • 1/2 cup of chopped celery
  • 1/4 cup of chopped dill pickles
  • 2 hard-boiled eggs, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
  2. Mix mayonnaise, Dijon mustard, salt, and pepper in a large bowl.
  3. Cut the cooled potatoes into cubes and add to the bowl.
