- 1 cup of mayonnaise

- 1/2 cup of chopped red onion

- 2 hard-boiled eggs, chopped
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
- Mix mayonnaise, Dijon mustard, salt, and pepper in a large bowl.
- Cut the cooled potatoes into cubes and add to the bowl.
- Add the chopped red onion, celery, dill pickles, and hard-boiled eggs.
- Gently stir to combine all ingredients.
