Description
Tender chicken and golden roasted potatoes baked together in a creamy, tangy ranch sauce for a comforting, one-pan dinner that’s rich, hearty, and full of flavor.
Ingredients
1.5 lbs boneless, skinless chicken breasts or thighs (cut into 1-inch pieces)
2 lbs small red or Yukon Gold potatoes (cut into 1-inch cubes)
2 tbsp olive oil (divided)
Salt and black pepper to taste
1 packet (1 oz) ranch seasoning mix
1/2 cup chicken broth
1/2 cup heavy cream or half-and-half
2 tbsp unsalted butter (melted)
1/4 cup shredded cheddar cheese (optional)
Fresh parsley or chives (for garnish)
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Toss potatoes with 1 tbsp olive oil, salt, and pepper. Spread on one half of the baking sheet.
3. Roast potatoes 15-20 minutes until starting to soften.
4. Meanwhile, toss chicken pieces with 1 tbsp olive oil, salt, and pepper.
5. In a small bowl, whisk ranch seasoning, chicken broth, cream, and melted butter. Add cheese if using.
6. Remove baking sheet from oven and add chicken to the other half.
7. Pour creamy ranch sauce over chicken and potatoes. Gently toss to coat.
8. Return to oven and roast 20-25 minutes, until chicken is cooked through and potatoes are tender.
9. Sprinkle with fresh parsley or chives and serve hot.
Notes
For crispier potatoes, roast them 20 minutes before adding chicken.
Add broccoli, bell peppers, or green beans for extra veggies.
Mix in a pinch of red pepper flakes for heat.
Try different cheeses like Gouda or Monterey Jack.
Use two pans if needed to avoid crowding for even roasting.
