  • 2 ribeye steaks (about 8 ounces per steak)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 6 garlic cloves (minced)
  • ½ teaspoon red pepper flakes (for heat, optional)
  • ½ cup chicken stock
  • 2 cups heavy cream
  • 2 ounces cream cheese (cut into cubes)
  • 2 sprigs fresh thyme
  • ⅛ teaspoon black pepper
  • 1 cup grated parmesan
  • 2 tablespoons minced parsley (for garnish)

Instructions

  1. Cook the spaghetti according to package instructions until al dente, reserving ½ cup of pasta water before draining.
  2. Season ribeye steaks with salt, black pepper, garlic powder, and dried thyme.
  3. Heat olive oil in a skillet over medium-high heat and sear the steaks for 4-5 minutes on each side for medium-rare. Let rest before slicing.
  4. Melt butter in the same skillet, sauté minced garlic for 1-2 minutes, and add red pepper flakes if desired.
  5. Pour in chicken stock and simmer, then stir in heavy cream and cream cheese until smooth.
  6. Add sprigs of thyme, ⅛ teaspoon black pepper, and grated parmesan, stirring until melted and sauce thickens. Adjust consistency with reserved pasta water.
  7. Toss cooked spaghetti in the creamy sauce until well-coated.
  8. Plate the pasta, top with sliced ribeye, and garnish with minced parsley. Serve immediately.
