- ½ cup (60 g) powdered sugar

- 1 cup (240 ml) whipped cream
- 1 ½ cups (225 g) fresh strawberries, diced
- 3 tablespoons (45 g) strawberry preserves or jam
- Optional: white chocolate drizzle, extra whipped cream, mint leaves for garnish
Instructions
- Lay your cooled sponge cake flat on a piece of parchment paper or a rolling mat.
- In a mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Carefully fold in the whipped cream until well combined.
- Spread the strawberry preserves evenly over the sponge cake.
- Spread the cream cheese mixture across the preserves, then sprinkle your diced strawberries everywhere!
- Starting from one short end, use the parchment paper to help you roll the cake tightly into a log.
- Wrap it in the parchment, chill for about 20-30 minutes, then slice into 1-inch pieces using a sharp knife.
- Arrange the pieces on a platter, and for a finishing touch, drizzle with white chocolate and garnish with whipped cream or mint leaves as desired.
