Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle juice
  • 1 cup seasoned breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Cooking oil (for frying)

Instructions

  1. Marinate the chicken in dill pickle juice for at least 30 minutes in the refrigerator.
  2. Set up a breading station with flour, beaten eggs, and a mixture of breadcrumbs and Parmesan cheese.
  3. Heat oil in a skillet over medium heat.
  4. Bread each chicken breast by coating in flour, then egg, and finally the breadcrumb mixture.
  5. Fry chicken for 5-7 minutes on each side until golden brown and cooked through.
  6. Drain excess oil on a paper towel and let rest for 5-10 minutes before serving.
  7. Enjoy immediately or store in an airtight container.

Notes

For a spicier version, add cayenne pepper to the breadcrumbs. You can also bake the chicken at 400°F (200°C) for a healthier option.
