- 4 boneless, skinless chicken breasts
- 1 cup dill pickle juice
- 1 cup seasoned breadcrumbs
- ½ cup grated Parmesan cheese
- 2 large eggs
- ½ cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- Salt and pepper to taste
- Cooking oil (for frying)
Instructions
- Marinate the chicken in dill pickle juice for at least 30 minutes in the refrigerator.
- Set up a breading station with flour, beaten eggs, and a mixture of breadcrumbs and Parmesan cheese.
- Heat oil in a skillet over medium heat.
- Bread each chicken breast by coating in flour, then egg, and finally the breadcrumb mixture.
- Fry chicken for 5-7 minutes on each side until golden brown and cooked through.
- Drain excess oil on a paper towel and let rest for 5-10 minutes before serving.
- Enjoy immediately or store in an airtight container.
Notes
For a spicier version, add cayenne pepper to the breadcrumbs. You can also bake the chicken at 400°F (200°C) for a healthier option.
