- 8 oz Cream Cheese
- 1 cup Almond Flour
- 1/4 cup Coconut Flour
- 1 cup Erythritol
- 1 large Egg
- 1 tsp Vanilla Extract
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 2 tsp Ground Cinnamon
- Additional Sweetener (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the softened cream cheese and erythritol until smooth.
- Add the egg, vanilla extract, baking powder, and salt, mixing well.
- Gradually blend in the almond flour and coconut flour until a soft dough forms.
- Divide the dough into small balls and flatten each into a rectangle on parchment paper.
- Sprinkle ground cinnamon and optional sweetener over the dough, then roll it up tightly.
- Place seam-side down on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown.
- Cool for a few minutes before slicing. Optionally, dust with powdered erythritol before serving.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. Freeze for longer storage, separating roll-ups with parchment paper.
