Description

Delicious low-carb roll-ups filled with cream cheese and cinnamon, perfect for a ketogenic diet.


Ingredients

  • 8 oz Cream Cheese
  • 1 cup Almond Flour
  • 1/4 cup Coconut Flour
  • 1 cup Erythritol
  • 1 large Egg
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 2 tsp Ground Cinnamon
  • Additional Sweetener (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the softened cream cheese and erythritol until smooth.
  3. Add the egg, vanilla extract, baking powder, and salt, mixing well.
  4. Gradually blend in the almond flour and coconut flour until a soft dough forms.
  5. Divide the dough into small balls and flatten each into a rectangle on parchment paper.
  6. Sprinkle ground cinnamon and optional sweetener over the dough, then roll it up tightly.
  7. Place seam-side down on a baking sheet lined with parchment paper.
  8. Bake for 20-25 minutes or until golden brown.
  9. Cool for a few minutes before slicing. Optionally, dust with powdered erythritol before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Freeze for longer storage, separating roll-ups with parchment paper.
