  • 4 small to medium chicken breasts (or 2 large breasts halved)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 34 cloves garlic, minced
  • 1 cup light cream or heavy cream
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup Parmesan cheese, grated
  • 1 cup spinach, chopped (optional)

Instructions

  1. Season the chicken breasts generously with salt and pepper on both sides.
  2. In a skillet, heat the olive oil over medium-high heat until hot.
  3. Place the seasoned chicken in the skillet and cook for about 5-6 minutes on each side until golden brown and crispy. Remove from skillet and set aside.
  4. Lower the heat and add minced garlic to the skillet, sautéing for about 30 seconds until fragrant.
  5. Pour in the light or heavy cream and stir continuously to combine with the garlic.
  6. Add Italian seasoning and grated Parmesan cheese, stirring until smooth and allowing to simmer for about 2-3 minutes.
  7. If desired, add chopped spinach to the sauce and stir until wilted.
  8. Return the chicken to the pan, coating with the creamy sauce, and heat for an additional minute before serving.

Notes
