Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 1 cup low-sodium beef broth
  • 3 large Russet potatoes, peeled and thinly sliced
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp olive oil
  • 2 tsp fresh thyme or rosemary, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, add the olive oil.
  3. Sauté the diced onions and minced garlic until fragrant and golden, about three minutes.
  4. Add the ground beef, breaking it apart as it browns.
  5. Once the beef is cooked through, mix in the diced carrots and frozen peas.
  6. Pour in the beef broth and add thyme or rosemary. Simmer for about 10 minutes until the mixture thickens slightly.
  7. In a baking dish, layer the beef mixture first, then artfully arrange the potato slices on top.
  8. Sprinkle the shredded cheddar cheese over the potatoes.
  9. Bake for approximately 45 minutes, or until the potato slices are golden brown and crispy.
