- 1 lb lean ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup frozen peas
- 1 cup low-sodium beef broth
- 3 large Russet potatoes, peeled and thinly sliced
- 1 cup shredded sharp cheddar cheese
- 2 tbsp olive oil
- 2 tsp fresh thyme or rosemary, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, add the olive oil.
- Sauté the diced onions and minced garlic until fragrant and golden, about three minutes.
- Add the ground beef, breaking it apart as it browns.
- Once the beef is cooked through, mix in the diced carrots and frozen peas.
- Pour in the beef broth and add thyme or rosemary. Simmer for about 10 minutes until the mixture thickens slightly.
- In a baking dish, layer the beef mixture first, then artfully arrange the potato slices on top.
- Sprinkle the shredded cheddar cheese over the potatoes.
- Bake for approximately 45 minutes, or until the potato slices are golden brown and crispy.
