Crispy Sweet Heat Chicken is an enticing dish featuring a delightful crunch from cornflakes and a sweet and spicy sauce that makes it ideal for family dinners or special occasions.


Ingredients

  • 6 cups cornflakes
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 2 large eggs, beaten
  • 2 tablespoons hot sauce
  • 2 pounds chicken breast tenderloins
  • Olive oil for drizzling
  • ½ cup honey
  • 2½ tablespoons hot sauce
  • 2 teaspoons cayenne pepper
  • ¾ teaspoon chipotle chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Sea salt to taste
  • Fresh herbs (thyme, cilantro, or parsley) for serving

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a food processor, blend the cornflakes, Parmesan cheese, smoked paprika, onion powder, garlic powder, and a pinch of salt until fine. Pour this mixture into a large bowl.
  3. In another bowl, mix the beaten eggs with hot sauce.
  4. Coat the chicken tenderloins in the egg mixture, ensuring they’re well-covered.
  5. Dredge the chicken in the cornflake mixture, pressing lightly to ensure it sticks. For extra crunch, dip back into the egg mixture and coat in the cornflake mixture again.
  6. Place the coated chicken on the baking sheet and drizzle lightly with olive oil.
  7. Bake for 20-25 minutes or until golden brown and crispy.
  8. While the chicken is baking, combine honey, hot sauce, cayenne pepper, chipotle chili powder, garlic powder, onion powder, and sea salt in a small pot. Warm through until well mixed.
  9. Once the chicken is done, drizzle the warm sauce over it and sprinkle with fresh herbs.

Notes

For extra crunch, consider double-coating the chicken. Adjust spice levels according to preference.
