Description
Creamy, comforting Crock Pot Cajun chicken pasta made with tender chicken, Cajun spices, cream cheese, Parmesan, and pasta for the ultimate weeknight dinner.
Ingredients
2 lbs boneless skinless chicken breasts, diced
1 onion, chopped
1–2 bell peppers (red, green, or yellow), chopped
2–3 cloves garlic, minced
2 ribs celery, diced (optional)
4 cups chicken broth
1 block cream cheese, cubed
1 cup heavy cream
1 cup grated Parmesan cheese
1 lb pasta (penne, rotini, or fettuccine), cooked al dente
2–3 tbsp Cajun seasoning
1 tsp oregano
1 tsp thyme
1 tsp smoked paprika
Salt and pepper, to taste
Fresh parsley or cilantro, for garnish
Instructions
1. Dice chicken, onion, bell peppers, garlic, and celery (if using).
2. Add chicken, vegetables, Cajun seasoning, oregano, thyme, smoked paprika, salt, and pepper to the slow cooker.
3. Pour in chicken broth and add cubed cream cheese.
4. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
5. Remove chicken, shred with two forks, and return to the slow cooker.
6. Stir in heavy cream and grated Parmesan until smooth and creamy.
7. Cook pasta separately until al dente, drain, and add to the slow cooker.
8. Mix gently to coat pasta in sauce, adjust seasoning, and garnish with parsley or cilantro before serving.
Notes
For extra heat, add cayenne pepper or red pepper flakes.
Use any pasta shape you prefer; short pasta works best for soaking up sauce.
Leftovers reheat well, but add a splash of broth or cream if sauce thickens.
