Description
A creamy, comforting potato soup made in the crockpot with garlic, cheddar, and simple seasonings – the perfect set & forget family dinner.
Ingredients
2 lbs Russet or Yukon Gold potatoes, peeled and diced
4–6 cups chicken or vegetable broth (low sodium)
4–6 cloves garlic, minced
1 medium yellow onion, diced
2 cups sharp cheddar cheese, freshly grated
1/2 cup heavy cream or half-and-half
Salt and black pepper, to taste
Dash of paprika or cayenne (optional)
Optional toppings: fresh chives, sour cream
Instructions
1. Peel and dice potatoes, dice onion, mince garlic, and grate cheddar cheese.
2. Add potatoes, onion, garlic, and 4 cups broth to crockpot; season with salt, pepper, and paprika if desired.
3. Cover and cook on low 6-8 hours or high 3-4 hours, until potatoes are fork-tender.
4. Mash some potatoes in the pot or use immersion blender for creamier consistency.
5. Stir in grated cheddar cheese and heavy cream until melted and smooth.
6. Taste and adjust seasonings.
7. Serve hot, topped with chives, bacon bits, sour cream, or extra cheddar.
Notes
Make it vegetarian by using vegetable broth.
For a smoky flavor, add smoked paprika or liquid smoke.
Add shredded chicken or diced ham in last hour for protein.
Stir in spinach, corn, or carrots for extra veggies.
Adjust thickness with more broth or by mashing more potatoes.
Freezes well; reheat with added splash of broth or milk.
