- 1 lb ground beef
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cups beef broth
- 4 cups diced potatoes
- 1 cup shredded cheddar cheese
- 1 cup milk
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
Instructions
- Cook the ground beef in a skillet over medium heat until browned, about 5 to 7 minutes. Drain excess fat.
- Transfer cooked beef to the crockpot and add diced onion, carrots, celery, beef broth, and diced potatoes. Stir well.
- Cover and cook on low for 6 to 8 hours or on high for about 4 hours.
- About 30 minutes before serving, add shredded cheddar cheese, milk, ketchup, Worcestershire sauce, and season with salt and pepper. Stir well to combine.
- Once cheese is melted and soup is hot throughout, ladle into bowls and serve warm.
