Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups cheese tortellini
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Place the chicken breasts in the crockpot and season with salt, pepper, and Italian seasoning.
  2. Pour the chicken broth over the seasoned chicken and add the minced garlic.
  3. Cover and cook on low for 6-7 hours or high for about 4 hours.
  4. Once cooked, shred the chicken using two forks.
  5. Return the shredded chicken to the crockpot and stir in the heavy cream and grated Parmesan cheese.
  6. Add the cheese tortellini and cook on high for an additional 30 minutes.
  7. Garnish with fresh parsley before serving.
