A delicious and hearty Chicken Tortilla Soup made in a crockpot, perfect for busy days and gatherings.
Ingredients

- 1 lb chicken breasts
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 3 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Tortilla strips for serving
- Avocado, lime, cilantro for garnish (optional)
Instructions
- In a slow cooker, add the chicken breasts, black beans, corn, diced tomatoes, chicken broth, onion, garlic, cumin, chili powder, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 360-480 minutes or high for 180-240 minutes.
- Once cooked, shred the chicken with two forks and mix it back into the soup.
- Serve hot, topped with tortilla strips, and garnish with avocado, lime, and cilantro if desired.
Notes
For a richer flavor, sauté the onion and garlic before adding them to the slow cooker. For a spicier soup, add diced jalapeños or cayenne pepper.
