Description

A delicious and hearty Chicken Tortilla Soup made in a crockpot, perfect for busy days and gatherings.


Ingredients

  • 1 lb chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 3 cups chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla strips for serving
  • Avocado, lime, cilantro for garnish (optional)

Instructions

  1. In a slow cooker, add the chicken breasts, black beans, corn, diced tomatoes, chicken broth, onion, garlic, cumin, chili powder, salt, and pepper.
  2. Stir to combine all ingredients.
  3. Cover and cook on low for 360-480 minutes or high for 180-240 minutes.
  4. Once cooked, shred the chicken with two forks and mix it back into the soup.
  5. Serve hot, topped with tortilla strips, and garnish with avocado, lime, and cilantro if desired.

Notes

For a richer flavor, sauté the onion and garlic before adding them to the slow cooker. For a spicier soup, add diced jalapeños or cayenne pepper.
