Ingredients

- 2–3 lbs beef chuck roast
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Hoagie rolls
- Sliced provolone cheese (optional)
- Au jus for dipping
Instructions
- Place the beef chuck roast in the crockpot.
- Add the sliced onion, minced garlic, beef broth, Worcestershire sauce, dried thyme, salt, and pepper.
- Cover and cook on low for 480-600 minutes (8-10 hours) or high for 240-360 minutes (4-6 hours) until the beef is tender.
- Shred the beef with two forks and stir the mixture.
- Serve the meat in hoagie rolls and top with provolone cheese, if desired.
- Serve with au jus for dipping.
Notes
For extra flavor, consider browning the beef before adding it to the crockpot. Serve with crunchy pickles or a side salad for a complete meal.
