Ingredients

  • 23 lbs beef chuck roast
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Hoagie rolls
  • Sliced provolone cheese (optional)
  • Au jus for dipping

Instructions

  1. Place the beef chuck roast in the crockpot.
  2. Add the sliced onion, minced garlic, beef broth, Worcestershire sauce, dried thyme, salt, and pepper.
  3. Cover and cook on low for 480-600 minutes (8-10 hours) or high for 240-360 minutes (4-6 hours) until the beef is tender.
  4. Shred the beef with two forks and stir the mixture.
  5. Serve the meat in hoagie rolls and top with provolone cheese, if desired.
  6. Serve with au jus for dipping.

Notes

For extra flavor, consider browning the beef before adding it to the crockpot. Serve with crunchy pickles or a side salad for a complete meal.
