Description

Tender meatballs slow-cooked in a rich French onion sauce with caramelized onions and beefy depth, finished with melty cheese if desired.


Ingredients

MEATBALLS: ground beef (or beef/pork mix)

Panko breadcrumbs

Milk

1 egg, lightly beaten

Minced garlic

Dried thyme

Salt and pepper

FRENCH ONION SAUCE: 2 large sweet onions, thinly sliced

Butter

Rich beef broth

Dry red wine (optional)

Worcestershire sauce

Dried thyme

1 bay leaf

Salt and pepper

FOR SERVING (optional): crusty bread or baguette

Shredded Gruyere or Swiss cheese

Fresh parsley, chopped


Instructions

1. In a bowl gently mix ground meat with panko, milk, egg, garlic, dried thyme, salt, and pepper; form 1-inch meatballs (about 25–30), taking care not to overmix.

2. (Optional) Brown meatballs in a hot skillet to add flavor and help them hold shape.

3. In the same skillet melt butter; cook sliced onions 10–15 minutes until soft and golden; deglaze with red wine if using and simmer briefly.

4. Transfer onions to the slow cooker; place meatballs on top; add beef broth, Worcestershire, dried thyme, and bay leaf; gently combine.

5. Cover and cook on LOW 6–8 hours or HIGH 3–4 hours until meatballs are cooked through and tender; discard bay leaf.

6. Serve meatballs with their onion gravy over mashed potatoes, bread, rice, or noodles; top with shredded Gruyere or Swiss and parsley if desired.

Notes

For true French onion soup vibes: ladle into oven-safe bowls, top with bread and cheese, and broil until bubbly.

Add sliced mushrooms with the onions for earthy depth.

Spice option: a pinch of red pepper flakes or smoked paprika.

Herb upgrade: add fresh rosemary and thyme sprigs (remove before serving).

Thicken the sauce with a cornstarch slurry during the last 30 minutes.
