- 4 boneless, skinless chicken breasts
- 2 cups small potatoes, halved
- 1/4 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chicken broth
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Wash the small potatoes, cut them in half, and place them at the bottom of the crockpot.
- In a mixing bowl, combine the minced garlic, grated Parmesan cheese, Italian seasoning, salt, pepper, and olive oil. Add the chicken broth and stir well.
- Place the chicken breasts on top of the halved potatoes and pour the garlic-Parmesan mixture over the chicken.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and fully cooked.
- Check the chicken for doneness, then sprinkle with fresh chopped parsley before serving.
