Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups small potatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Wash the small potatoes, cut them in half, and place them at the bottom of the crockpot.
  2. In a mixing bowl, combine the minced garlic, grated Parmesan cheese, Italian seasoning, salt, pepper, and olive oil. Add the chicken broth and stir well.
  3. Place the chicken breasts on top of the halved potatoes and pour the garlic-Parmesan mixture over the chicken.
  4. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and fully cooked.
  5. Check the chicken for doneness, then sprinkle with fresh chopped parsley before serving.
