Crockpot Hamburger Potato Casserole: How I Made It 4 Times

Description

Hearty slow-cooked casserole with layers of seasoned ground beef, tender sliced potatoes, and creamy mushroom-cheddar sauce—easy, cozy, and family-friendly.


Ingredients

1.5 lbs lean ground beef

45 medium potatoes, peeled and thinly sliced

1 medium onion, chopped

1 can (10.75 oz) cream of mushroom soup, undiluted

1/2 cup milk

2 cups shredded cheddar cheese, divided

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt, or to taste

1/4 tsp black pepper, or to taste

Cooking spray

Optional toppings: chopped parsley, green onions, crumbled bacon


Instructions

1. Brown ground beef with chopped onion in a skillet over medium heat until beef is cooked and onion is tender; drain excess grease.

2. Season beef mixture with garlic powder, onion powder, salt, and black pepper; stir to combine.

3. In a bowl whisk cream of mushroom soup with milk until smooth.

4. Spray the slow cooker with cooking spray.

5. Layer half the potato slices in the bottom of the slow cooker.

6. Top with half of the seasoned beef, then 1 cup cheddar, then half of the soup mixture.

7. Repeat layers with remaining potatoes, beef, cheddar (reserve 1/2 cup for topping), and the rest of the soup mixture.

8. Cover and cook on LOW 6–8 hours or HIGH 3–4 hours, until potatoes are tender.

9. During the last 30 minutes, sprinkle remaining 1/2 cup cheddar on top; cover to melt.

10. Garnish with parsley, green onions, or bacon if desired; serve warm.

Notes

Slice potatoes evenly for consistent cooking.

Draining beef well prevents a greasy casserole.

Try different cheeses like Monterey Jack, Colby, or pepper jack.

Add veggies such as bell peppers, peas, or corn during the last hour.

Swap cream of mushroom for cream of celery or cream of chicken for a twist.
