  • 4 pieces boneless skinless chicken breasts
  • 8 oz cream cheese, softened
  • 1 cup parmesan cheese
  • 1/2 cup sun-dried tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup chicken broth

Instructions

  1. Prepare the chicken: Place the chicken breasts in the bottom of your crockpot.
  2. Mix the sauce: In a bowl, combine the softened cream cheese, parmesan cheese, sun-dried tomatoes, minced garlic, Italian seasoning, and chicken broth. Stir until the mixture is smooth and well blended.
  3. Combine: Pour the creamy mixture over the chicken in the crockpot. Make sure the chicken is well covered.
  4. Cook: Cover the crockpot and cook on low for 360-480 minutes or on high for 180-240 minutes, until the chicken is cooked through and tender.
  5. Serve: Once done, shred the chicken gently with two forks right in the crockpot and mix it with the sauce.

Notes

For a thicker sauce, add more parmesan cheese. Store leftovers in an airtight container for up to 3-4 days.
