Hearty, cheesy, and bursting with bold taco flavor — this Crockpot Taco Casserole is the ultimate easy weeknight comfort meal that practically cooks itself!
Ingredients
1 lb ground beef or turkey
1 packet (1 oz) taco seasoning
1 cup beef broth
1 (15 oz) can black beans, rinsed and drained
1 (15 oz) can whole kernel corn, drained
1 (10 oz) can Rotel diced tomatoes with green chilies, undrained
1 (8 oz) can tomato sauce
1 cup shredded Colby Jack or Mexican blend cheese, plus more for topping
1/2 cup sour cream, for serving
Crushed tortilla chips, for serving
Fresh cilantro, chopped, for garnish
Instructions
1. Brown ground beef or turkey in a large skillet over medium heat until cooked through; drain excess fat.
2. Transfer the cooked meat to a 6-quart crockpot.
3. Sprinkle taco seasoning over the meat.
4. Add beef broth, black beans, corn, Rotel tomatoes (with juice), and tomato sauce.
5. Stir everything together until well combined.
6. Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours, until hot and flavors are well blended.
7. About 30 minutes before serving, stir in 1 cup of shredded cheese and let it melt.
8. Spoon into bowls and top with extra cheese, crushed tortilla chips, sour cream, and cilantro.
Notes
Add a diced jalapeño or cayenne pepper for extra spice.
Stir in spinach during the last 30 minutes for added greens.
Try smoked paprika for a smoky depth.
Use shredded chicken or turkey instead of beef for variation.
