Description

A hearty and creamy white chicken chili that is perfect for busy days and family dinners.


Ingredients

  • 2 cups shredded boneless skinless chicken breasts
  • 8 oz cream cheese
  • 1 cup corn
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup cilantro (optional)

Instructions

  1. In a crockpot, combine the shredded chicken, corn, black beans, diced tomatoes, onion, garlic, and seasonings.
  2. Pour the chicken broth over the mixture and stir well.
  3. Cook on low for 360-480 minutes (6-8 hours) or on high for 180-240 minutes (3-4 hours).
  4. About 30 minutes before serving, add the cream cheese and stir until melted and creamy.
  5. Serve hot, garnished with cilantro if desired.

Notes

For a thicker chili, blend a portion of the beans before adding to the crockpot. You can also use rotisserie chicken for quicker preparation.
