A hearty and creamy white chicken chili that is perfect for busy days and family dinners.
Ingredients

- 2 cups shredded boneless skinless chicken breasts
- 8 oz cream cheese
- 1 cup corn
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 tsp cumin
- 2 tsp chili powder
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 cup cilantro (optional)
Instructions
- In a crockpot, combine the shredded chicken, corn, black beans, diced tomatoes, onion, garlic, and seasonings.
- Pour the chicken broth over the mixture and stir well.
- Cook on low for 360-480 minutes (6-8 hours) or on high for 180-240 minutes (3-4 hours).
- About 30 minutes before serving, add the cream cheese and stir until melted and creamy.
- Serve hot, garnished with cilantro if desired.
Notes
For a thicker chili, blend a portion of the beans before adding to the crockpot. You can also use rotisserie chicken for quicker preparation.
