- 6 large eggs
- 1 cup milk
- 1 cup baby spinach leaves
- 1 cup asparagus, chopped
- 1 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- Olive oil or butter for greasing the pan
Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together the eggs and milk until well combined.
- Stir in the baby spinach, chopped asparagus, and cheese. Season with salt and pepper.
- Grease a pie dish or baking dish with olive oil or butter.
- Pour the egg mixture into the prepared dish.
- Bake in the preheated oven for 30-35 minutes, or until the quiche is set and the top is lightly golden.
- Allow to cool for a few minutes before slicing and serving.
Notes
This quiche can be enjoyed hot or cold and is great for meal prepping. It stores well in the fridge for up to three days.
