Description
A lighter and easier version of the traditional quiche, packed with ricotta cheese, spinach, and cherry tomatoes.
Ingredients

- 1 cup ricotta cheese
- 4 large eggs
- 1/2 cup grated Parmesan cheese
- 1/2 cup milk
- 1 cup spinach (chopped)
- 1 cup cherry tomatoes (halved)
- Salt and pepper to taste
- Olive oil or butter (for greasing the pan)
Instructions
- Preheat the oven to 375°F (190°C). Grease a pie dish with olive oil or butter.
- In a large bowl, whisk together the ricotta, eggs, Parmesan, and milk until smooth.
- Stir in the chopped spinach, halved cherry tomatoes, salt, and pepper.
- Pour the mixture into the greased pie dish.
- Bake for 30-35 minutes or until the center is set and the top is lightly golden.
- Allow to cool for a few minutes before slicing and serving.
Notes
Customize with other vegetables or cheeses for a different flavor.
