- 8 skinless, boneless chicken thighs
- 2 tbsp cornstarch
- ½ tsp salt
- ½ tsp pepper
- 2 tbsp vegetable oil
- 1 tbsp unsalted butter
- 4 cloves minced garlic
- 110g (1/3 cup) honey
- 80ml (1/3 cup) chicken stock
- 1 tbsp rice vinegar
- 1 tbsp light soy sauce
- 1 tbsp finely chopped fresh parsley
- ½ tsp chili flakes
Instructions
- Cut the chicken thighs into 1-inch pieces and pat them dry with paper towels. Season with salt and pepper.
- In a bowl, combine minced garlic, honey, chicken stock, rice vinegar, soy sauce, and chili flakes. Whisk until well combined.
- Heat vegetable oil and butter in a skillet over medium-high heat. Sear chicken pieces for 3-4 minutes, flip and cook until internal temperature reaches 165°F/74°C.
- In the same skillet, make a cornstarch slurry with cornstarch and water. Pour in the honey garlic mixture, scraping the skillet, and bring to a simmer. Gradually add the cornstarch slurry until thickened.
- Add chicken back to the skillet, toss to coat in sauce, and let simmer to absorb flavors.
- Transfer to a serving platter, garnish with parsley, and serve with rice or vegetables.
Notes
For extra flavor, marinate chicken in the honey garlic mixture for at least 30 minutes. Serve with rice or steamed vegetables.
