Tasty and filling low-carb roll-ups that combine classic Philly cheesesteak flavors in a healthy form.


Ingredients

  • 1 lb thinly sliced ribeye or sirloin beef
  • 8 oz provolone cheese, sliced
  • 1 cup mixed bell peppers, chopped
  • 1 medium sweet onion, chopped
  • 2 tbsp extra virgin olive oil
  • 4 low-carb tortillas

Instructions

  1. Gather and prep your ingredients by slicing the beef and chopping the vegetables.
  2. Heat olive oil in a skillet over medium heat.
  3. Sauté the onions and bell peppers for 5-7 minutes until soft.
  4. Add the sliced beef, season with salt and pepper, and cook for 3-5 minutes until browned.
  5. Reduce heat to low, add provolone cheese on top, cover, and let melt for 2-3 minutes.
  6. Lay out low-carb tortillas ready for filling.
  7. Assemble the roll-ups by spooning the beef and vegetable mixture onto each tortilla and rolling tightly.
  8. Cook the roll-ups seam-side down in the skillet for 3-4 minutes until golden brown.
  9. Serve sliced or whole, optionally with dipping sauces.

Notes
