  • 4 boneless skinless chicken breasts
  • Salt and pepper
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes (optional)
  • ½ cup chopped sun-dried tomatoes (in oil, drained)
  • 2 tbsp butter
  • Fresh basil or parsley for garnish

Instructions

  1. Season both sides of the chicken breasts with salt and pepper.
  2. In a bowl, whisk together chicken broth, heavy cream, Parmesan cheese, garlic, oregano, thyme, and red pepper flakes.
  3. Place the seasoned chicken breasts into the crockpot.
  4. Pour the prepared sauce over the chicken, ensuring it is well covered.
  5. Sprinkle chopped sun-dried tomatoes over the top.
  6. Cover and cook on LOW for 4 hours or HIGH for 2 hours.
  7. During the last 30 minutes, add butter to the crockpot and stir into the sauce.
  8. Garnish with fresh basil or parsley before serving.
  9. Serve with rice, pasta, or bread.
