Description

  • 1 homemade single pie crust (1 sheet of pie dough)
  • 1/4 teaspoon lemon zest
  • Juice from half a lemon (about 2 tablespoons)
  • 5 pounds apples (about 11 large apples)
  • 1/2 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1 & 1/2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 1/2 teaspoon cardamom (optional)
  • 1 teaspoon vanilla extract
  • 1 & 1/2 cups all-purpose flour (for crumble)
  • 1/3 cup granulated sugar (for crumble)
  • 3/4 cup brown sugar (packed, for crumble)
  • 1/2 teaspoon kosher salt (for crumble; use less if using table salt)
  • 3/4 cup butter (melted, which is about 1 and 1/2 sticks)

Instructions

  1. Choose your apples by selecting a mix for the best flavor (e.g., Granny Smith, Honeycrisp, and Golden Delicious).
  2. Make the filling by zesting lemon peel and adding the lemon juice in a skillet.
  3. Prepare the apples by peeling and slicing them into 1/8 inch thick pieces, adding them to the skillet with lemon juice as you go.
  4. Cook the apples over medium heat with brown sugar, granulated sugar, flour, salt, and spices for 20 minutes.
  5. Cool the filling after adding vanilla extract, transferring it to a half sheet pan.
  6. Prepare the pie crust and chill it for 30 minutes.
  7. Preheat the oven to 425°F (220°C) with a baking sheet or pizza stone inside.
  8. Make the sugar crumble mixture and chill it.
  9. Assemble the pie by scraping the apple filling into the chilled pie shell and covering with crumble.
  10. Bake at 425°F for 15 minutes, then reduce to 350°F (175°C) for an additional 10 minutes.
  11. Finish baking by adding more crumble, using a foil shield for the crust, for 25-35 minutes.
  12. Cool the pie for at least 4 hours before serving.

Notes

Serve warm or at room temperature, optionally with vanilla ice cream or caramel sauce. Store at room temperature for up to 2 days or in the fridge for up to a week.
