- 2 large eggs
- 1 cup milk
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Oil for frying
- Powdered sugar for dusting
Instructions
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In another bowl, vigorously whisk the eggs, then add in the milk, melted butter, and vanilla extract.
- Gradually mix the wet ingredients into the dry ingredients, stirring gently until just combined; be careful not to overmix.
- Heat oil in a deep skillet to 350°F (175°C).
- Use a spoon to drop dollops of the batter into the hot oil, frying until they turn golden brown on all sides (about 2-3 minutes).
- Carefully remove the beignets from the oil and place them on paper towels to drain excess oil, then dust with powdered sugar before serving.
Notes
For best results, do not overmix the batter and use a thermometer to ensure correct oil temperature.
