Easy Cheesy Ground Beef Enchiladas: How To Make It Easy

Description

Soft tortillas stuffed with seasoned ground beef, topped with enchilada sauce and plenty of melty cheese for the ultimate comfort food dinner.


Ingredients

1 lb lean ground beef (or ground turkey)

1 tbsp olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 (15 oz) can diced tomatoes, undrained

1 (4 oz) can chopped green chiles, undrained

1 tsp chili powder

1/2 tsp ground cumin

1/4 tsp salt

Pinch of black pepper

12 small corn or flour tortillas

1 (10 oz) can enchilada sauce (red or green)

2 cups shredded Monterey Jack or cheddar cheese (or blend)

Optional garnishes: fresh cilantro, sour cream, sliced avocado


Instructions

1. Heat olive oil in skillet over medium heat. Cook onion until softened.

2. Add ground beef, cook until browned. Drain excess grease.

3. Stir in garlic, diced tomatoes, green chiles, chili powder, cumin, salt, and pepper. Simmer 10-15 minutes.

4. Preheat oven to 375°F (190°C). Spread 1/2 cup enchilada sauce in bottom of 9×13 inch baking dish.

5. Warm tortillas to make them pliable.

6. Spoon about 1/4 cup beef mixture into each tortilla, sprinkle some cheese, roll up, and place seam-side down in baking dish.

7. Pour remaining enchilada sauce evenly over tortillas. Top with remaining cheese.

8. Bake 20-25 minutes until cheese is bubbly and lightly golden.

9. Serve hot with cilantro, sour cream, or avocado.

Notes

Add cayenne or hot sauce for spicier enchiladas.

Mix in bell peppers, corn, or black beans for more texture and nutrition.

Stir cream cheese into beef filling for extra creaminess.

Try different cheeses like Pepper Jack, Oaxaca, or Asadero.

Assemble ahead of time and refrigerate; bake when ready.
