Description

Easy cheesy ranch potatoes & smoked beef sausage deliver a fast, family-friendly one-pan dinner. Tender ranch-seasoned potatoes, smoky sausage, and bubbly cheddar bake to golden perfection in under an hour. It’s weeknight-simple, hearty, and crowd-pleasing—great for potlucks or busy nights when you want real comfort with minimal prep.


Ingredients

1 1/2 lbs baby red or Yukon gold potatoes, quartered

1 lb smoked beef sausage , sliced into 1/2-inch coins

2 tbsp olive oil

1 (1 oz) packet ranch seasoning (or 3 tbsp homemade)

1 tsp garlic powder

1/2 tsp black pepper

1 1/2 cups shredded sharp cheddar (or Colby Jack)

2 tbsp chopped parsley or sliced green onions (garnish)

Optional: 1 red bell pepper, diced; 1/2 tsp smoked paprika


Instructions

1. Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.

2. Toss potatoes with olive oil, ranch seasoning, garlic powder, and pepper in a large bowl.

3. Spread potatoes in the dish. Nestle sausage coins (and bell pepper, if using) over the top.

4. Cover tightly with foil and bake 30–35 minutes, until potatoes turn fork-tender.

5. Uncover, stir, and sprinkle cheese over the top. Bake 8–10 minutes until melted and lightly golden. Broil 1–2 minutes for extra color if you like.

6. Rest 5 minutes. Garnish with parsley or green onions. Serve hot.

Notes

For crispier edges, preheat the empty pan in the oven for 10 minutes before adding the potatoes.

Swap cheeses as you like: pepper jack for heat, mozzarella for extra stretch.

Add-ins: diced bell pepper or onion bake well alongside the sausage.

Store leftovers in an airtight container up to 4 days. Reheat in a 350°F oven for 10–12 minutes or microwave in short bursts.

Serve with a green salad or steamed broccoli for balance.
