Description

A hearty and flavorful chuck roast cooked slowly in a crockpot, perfect for busy days.


Ingredients

  • 34 pounds chuck roast
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 4 carrots, chopped
  • 4 potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh herbs (such as thyme or rosemary) for garnish

Instructions

  1. Place the sliced onions and minced garlic at the bottom of the crockpot.
  2. Season the chuck roast with salt and pepper, then place it on top of the onions.
  3. Add the chopped carrots and diced potatoes around the roast.
  4. Pour the beef broth and Worcestershire sauce over the roast and vegetables.
  5. Cover and cook on low for 480-600 minutes or on high for 240-300 minutes, until the roast is tender.
  6. Remove the roast and vegetables from the crockpot, slice the roast, and serve with the cooking juices.
  7. Garnish with fresh herbs if desired.

Notes

For a richer flavor, consider searing the chuck roast before adding it to the crockpot. You can also add other vegetables like green beans or peas.
