Ingredients

- 3–4 pounds chuck roast
- 1 onion, sliced
- 3 cloves garlic, minced
- 4 carrots, chopped
- 4 potatoes, diced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- Fresh herbs (such as thyme or rosemary) for garnish
Instructions
- Place the sliced onions and minced garlic at the bottom of the crockpot.
- Season the chuck roast with salt and pepper, then place it on top of the onions.
- Add the chopped carrots and diced potatoes around the roast.
- Pour the beef broth and Worcestershire sauce over the roast and vegetables.
- Cover and cook on low for 480-600 minutes or on high for 240-300 minutes, until the roast is tender.
- Remove the roast and vegetables from the crockpot, slice the roast, and serve with the cooking juices.
- Garnish with fresh herbs if desired.
Notes
For a richer flavor, consider searing the chuck roast before adding it to the crockpot. You can also add other vegetables like green beans or peas.
