Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 can diced green chilies
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the white beans, corn, onion, garlic, chicken broth, diced green chilies, cumin, chili powder, salt, and pepper.
  3. Stir to combine, then cover and cook on low for 360-480 minutes or on high for 180-240 minutes.
  4. Near the end of cooking, shred the chicken with two forks and stir in the sour cream and shredded cheese until melted.
  5. Serve hot, garnished with additional cheese if desired.

Notes

For a creamier soup, blend a portion of the soup before serving. Adjust spice levels by varying the chili powder and green chilies.
