- 1 lb boneless, skinless chicken breasts
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 can diced green chilies
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup sour cream
- 1 cup shredded cheese (optional)
Instructions
- Place the chicken breasts in the crockpot.
- Add the white beans, corn, onion, garlic, chicken broth, diced green chilies, cumin, chili powder, salt, and pepper.
- Stir to combine, then cover and cook on low for 360-480 minutes or on high for 180-240 minutes.
- Near the end of cooking, shred the chicken with two forks and stir in the sour cream and shredded cheese until melted.
- Serve hot, garnished with additional cheese if desired.
Notes
For a creamier soup, blend a portion of the soup before serving. Adjust spice levels by varying the chili powder and green chilies.
