A healthy and delicious flourless carrot cake made with oats and sweetened with honey, perfect for any occasion.
Ingredients
Scale
- 2 eggs
- ½ cup honey
- 2 carrots, shredded
- 1 cup oats
- ½ tsp baking soda
- 1 tbsp cinnamon
- ¼ cup butter, room temperature
- 1 tsp vanilla
Instructions
- Preheat the oven to 180C (300F).
- Blend all ingredients except the shredded carrots in a mixing bowl until smooth.
- Gently stir in the shredded carrots.
- Line a 7×7 inch baking pan with parchment paper.
- Pour the mixture into the pan and bake for 20-30 minutes, checking with a toothpick for doneness.
- Allow the cake to cool in the pan before slicing.
Notes
Serve with whipped cream, ice cream, or a drizzle of honey for extra sweetness.
