Description

A healthy and delicious flourless carrot cake made with oats and sweetened with honey, perfect for any occasion.


Ingredients

Scale
  • 2 eggs
  • ½ cup honey
  • 2 carrots, shredded
  • 1 cup oats
  • ½ tsp baking soda
  • 1 tbsp cinnamon
  • ¼ cup butter, room temperature
  • 1 tsp vanilla

Instructions

  1. Preheat the oven to 180C (300F).
  2. Blend all ingredients except the shredded carrots in a mixing bowl until smooth.
  3. Gently stir in the shredded carrots.
  4. Line a 7×7 inch baking pan with parchment paper.
  5. Pour the mixture into the pan and bake for 20-30 minutes, checking with a toothpick for doneness.
  6. Allow the cake to cool in the pan before slicing.

Notes

Serve with whipped cream, ice cream, or a drizzle of honey for extra sweetness.
