Ingredients

- 200g halloumi cheese
- 200g pasta (penne or fusilli)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, finely chopped
- Fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain and let it cool.
- While the pasta cools, heat a non-stick skillet over medium heat. Slice the halloumi and pan-fry it until golden brown, about 2-3 minutes on each side.
- In a large bowl, mix the cooled pasta, cherry tomatoes, diced cucumber, bell pepper, red onion, and chopped parsley.
- Gently fold in the fried halloumi to the bowl.
- Drizzle with olive oil and lemon juice, then season with salt and pepper according to taste.
- Carefully toss everything together. Serve immediately or chill in the refrigerator before serving.
Notes
For substitutions, try feta cheese for a tangy kick or whole grain pasta for a healthier option. This salad can be made ahead of time for better flavor.
