Description

Ingredients

  • 200g halloumi cheese
  • 200g pasta (penne or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • Fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and let it cool.
  2. While the pasta cools, heat a non-stick skillet over medium heat. Slice the halloumi and pan-fry it until golden brown, about 2-3 minutes on each side.
  3. In a large bowl, mix the cooled pasta, cherry tomatoes, diced cucumber, bell pepper, red onion, and chopped parsley.
  4. Gently fold in the fried halloumi to the bowl.
  5. Drizzle with olive oil and lemon juice, then season with salt and pepper according to taste.
  6. Carefully toss everything together. Serve immediately or chill in the refrigerator before serving.
